This is a troll game. The game gets exponentially more difficult to the point of impossibility such as opening a level for an instant hit/death prohibiting 3-star progress. Hopefully it's bug, but it just seems like bad design.
Edit: I have completed the game to 100% and it seems like my concerns were addressed. There are still updates rolling out that expand the game and its achievements, so this is still a work in progress.
